It's been forever since we made a session IPA in the west coast style so we have been looking forward to this version of the contrast series. We selected hops that are certainly modern and fruit forward but ones that we feel would suit both styles of beer very well. In particular, we felt that Strata would be a very suitable hop. It has been widely used in hazy IPAs since it has been popularised but from the beers we have brewed with it we have noticed a level of grassiness and a dankness that should play well in a west coast style beer. Paired with Citra and Amarillo we wanted to push lots of bright citrus character as well as more tropical notes. Don't be fooled by the slight haze, expect a drier, more bitter low ABV beer. We wanted the malt base to provide a bit of chew so we used a biscuity Maris Otter along with some wheat and dextrin for bodybuilding and some Carahell to provide a slight caramel note to play with the bitterness for that classic sticky, resin west coast vibe.
